Oatmeal Zucchini Pancakes

I can't believe I forgot to tell you ~ I shared my very favorite pancake recipe on The Storylady Cooking Blog recently!  I made them again today, but with the addition of 1 cup of grated zucchini and a healthy dose of cinnamon and nutmeg.  The kids loved them, just as much as they love the 'regular' oatmeal pancakes.  I'll have to remember this for St. Patrick's Day, although it is completely NOT zucchini season in March.  :)

I think I am going to make these tonight for dinner. I have 2 giant zucchinis sitting on my counter from our garden! Do you recommend the pancakes with or without or does it make much of a difference. I also have a freezer full of grated zucchini from last year. . .

Yum That sounds delicious. I just tried Oatmeal Pancakes on the kids this morning. I will have to try adding some Zucchini in it too.

Mrs Fuzz ~ Well too late to comment on w/ or w/o the zucchini. What did you do?? I didn't think there was a huge difference WITH the zucchini so I'd say put it in if you have it; fun to have GREEN PANCAKE day. and healthy. :) I also made some Chocolate Zucchini Muffins (dairy free) today....

For now, pretty much I only make oatmeal pancakes so they kids are just stoked to get something other than their usual ~ hot oatmeal! :)
